"Slice of life" is basically just a wildly abused blanket term for anything that isn't an action show. It's been like that for quite a while now.

In the past it's been used for anything that can't be categorized as something else, like NNB. Shows devoid of drama, comedy not being the main focus, no romance stuff, generally slow paced, etc.
At least as far as I know.

Not really. A slice of someone's life would inherently include all the mundane aspects of their life, which would rule things out like Mushishi but include more fantasy such as Aria.

A number of dramas include mundane aspects of life as well. Hanasaku Iroha did have quite a bit of drama but it also focused a lot on the mundane parts and the problems that can arise from running an inn. However I wouldn't say something like Yahari is a SoL since it was nothing but drama attempting to keep the viewer on the edge of their seat (i.e. a lot of plot focus).

That's just my personal categorization though. I see genres as a series of tick boxes instead of the single defining trait that encompasses an entire show.

I'm watching older anime. I just finished Black Lagoon, I've downloaded a couple of movies, and I'm watching Kare Kano and Mirai Shounen Conan. It's good that there's only shitty shows this season, because then I can finally watch some real animes.

Stage 2: Discovers shonen series, likely Bleach on Adult Swim. Briefly becomes an IRL version of Rikka from Chuunibyou. Does not yet understand why Cred Forums trolls shonenshit threads. Will hate self for the rest of his natural life for this brief phase.

Stage 3: Mature / deepfag phase. Once he begins to realize shonenshit is shit, begins to seek out “deep” and critically acclaimed anime such as Tatami Galaxy, Evangelion, Lain, etc. Starts debating the meaning of these anime on Cred Forums, as well as starts trolling shonenshit threads, suddenly feeling superior to the plebes in said threads.

Stage 4: Moefag, the final phase. Decides to try a moe series which Cred Forums seems to love, such as Aria, or more recently Non Non Biyori, etc… justifying it to self as for “purely academic reasons,” e.g. so they can troll or shittalk these series with an informed viewpoint.
