Try throwing some kukris at them, they get fucking destroyed.

Souls has this thing where, if your moveset is compatible with the enemy, it becomes easier and if it isn't, it become harder.

Long answer: Most non-humanoid monsters are trickier to get a handle on, because you (for the most part) know how the human body moves and functions, you can accurately predict what's coming next based on how they move.
You're not a an eldritch abomination, or skeletal dog so you have very little frame of reference for how they move until you actually see it happen.

That's my reasoning for most bullshit non-human creatures in vidya anyways

because they gave the bosses tiny health pools and extremely telegraphed attacks for some reason, coupled with a fuck ton of estus there is no challenge

I've finished the game and can't remember a room with three of them in. It's been a while since I played but the only one I encountered was the one (Or was it two?) in the Area where you fight Yhorm just above the toxic swamp. Only time I remember fighting that guy.

Use a bleed weapon or carthus rouge and see 3k+ damage in seconds.

It's on ground level with the toxic swamp. Open big double doors. There's nothing but purging stones in there if I remember correctly.

Speaking of DS3 enemies, am I the only one that doesn't understand how their health sucking/limiting power works?

It works long as you are in their field of vision

When they look at you, you lose health, all you need to do is get out of their sight.
