I loved the Lost Planet games. The character designs for both the human characters and the Akrid were pretty interesting, and in general they were just fun games to play. Lost Planet 2 had better bossfights than the first one.

I like the boss fights in Megaman Battlenetwork.
In more recent titles, the boss fights in RE5 and RE6 are kind of good. My favorite type of boss fight is one where I'm overmatched. Having to strategically take on groups of enemies at a time in order to open up the boss is fun.
