You know if you just run off the pipe he'll land on the first little bit of ground, run over the gap and then you can just jump off the end piece.

You can't really roll in the air, but you can jump out of a roll, even if the roll ends with you standing on nothing, giving you a sort of pseudo double jump.

If you Roll or Cartwheel off a ledge, you can jump out of it so long as you do it before the Roll/Cartwheel ends.

Rocket cars don't need room to build up speed though, they have rocket boosters and it's strong enough to lift them into the air.

Sure, but it's nowhere near Mario's jumps. Keep in mind that Mario is about 5"2', making that pit about 15.5 feet across. Link has never jumped that far, and even the hover boots would be pushing it.
