If DA2 wasn't "Dragon Age: Kirkwall and the surrounding copy-paste hills and caves" people would've liked it.

If DA2 was a good game people would have liked it.

Because overall Letho isn't a villain. He's established as the antagonist simply because Geralt was in the wrong place at the wrong time. The man's even in a similar situation as Geralt, being under the employment of a powerful monarch. He doesn't even want to fight you that much by the end of the story.

Meanwhile Eredin is hyped up to be a powerful warlord of inter-dimensional riders that have relatively little impact on the game world. His motivations seem rather one-dimensional as well.

What are some games where I can beat the primary antagonist by talking him down/proving him wrong?

Assuming you're comfortable with older games, Planescape: Torment would be perfect for what your interests.
