Google and Facebook are literally embedded into almost every website. You have a unique ID with both, that you don't know about - even if you do not have accounts with either. It is effortlessly easy for Google and Facebook scripts to track your online behavior. They constantly add this newfound info to your profile under your ID, and you see the results.

Removing cookies isn't enough. You have to actively hunt and block their trackers. You need to use a content blocker (adblock, ublock, noscript, etc.) for this.
Keep all Google domains blocked, enable them temporarily when you really need them, then re-block them afterwards again. Never unblock Facebook. Using Instagram makes you fail this requirement, as it links deeply to these services.

Do you use a phone with a GPS or wifi enabled? If so, Google tracks your position. So if someone at your location looks for things that your virtual google profile would like, then it's you. You don't have to have a google account to have a google profile. It's just an abstract copy of you.
Then there are some advanced ways, like knowing you by the way of typing or your grammar or the words you use. Or google/siri just reacting to your voice.
It's not "scary". It's convenient. If you have nothing to hide you have nothing to fear.

I've got a weird one. I went to an auto parts store (AutoZone) earlier this summer to get an oil filter for my car. Found what I was looking for and checked out. I paid cash, no rewards card and provided no info besides a $20 bill.
Four days later I got a coupon in the mail from said auto parts store for oil change kits. Addressed to me directly, not just a generic mailer. Never received one before in four and half years living at my house. No history with this company, no rewards card, no nothing.
