1) Lightning is not the only way to listen to music on the iPhone 7. You can instead opt to buy any one of the >9000 standard Bluetooth headsets not made or licensed by Apple. Some of these cost even less than EarPods do.

2) Apple included a Lightning -> 3.5mm adapter in the box with every single iPhone 7. Note that there's actually a DAC in that little dongle. It's a meaningfully expensive thing to include, relatively speaking.

3) Lightning EarPods cost exactly as much as 3.5mm EarPods did. Don't you think they'd raise the price on account of "new technology" to celebrate their newfound de facto monopoly, if this was really what they were after?

Here's why Apple actually got rid of the jack: it makes the phone cheaper to manufacture, it results in fewer service visits related to getting shit stuck/broken off in the headphone jack, and it makes waterproofing easier (yes, there are waterproof headphones with headphone jacks, but that doesn't necessarily imply that the headphone jack doesn't present an unnecessary engineering complication when implementing waterproofing).

It's just like the removal of Flash. People will be pissy about it because the move is forceful and ahead of its time, but history will remember it as a good and necessary thing that someone had to do eventually.

And they still have better water resistance.

Irrelevant, because that technology is on every phone, and if someone wanted to listen with a bluetooth headset they would already have done so.

If the 7 was actually incapable of interfacing with 3.5mm, there would be actual sales lost because a lot of things depend on that.
The dongle allows apple to claim that they aren't really removing capability, but it makes it much more inconvenient to use 3.5mm devices.

Their profit margin is slightly lower on the Lightning ear pods, but now with the lightning interface they are guaranteed money from any directly connecting audio devices.
