Funny enough a vegetarian Canadian friend told me that it's way easier to be a veggie in here than in US or Canda. Most famous dishes (except for tacos) have some vegetarian variation.
Tortas have the Suizas variation
Quesadillas have the mushrooms or pumpkin flower variation
Tamales (if made without lard) have different vegetarian variations like beans, hierba santa, raja, chipilin and several others.
You got to understand that this kind of food is sold everywhere in México. Even in the smallest city or town you'll find at least one of these street stands in 4 blocks.
