Battlestar Galactica - conveys that hopeless and dark atmosphere that the show was going for perfectly.
L O S T - so simple, yet that opening sound will forever be ingrained in my head. It was mysterious and strange much like the Island itself. Just hearing it in my head makes me want to re-watch the show.
Fargo - both seasons have excellent and memorable intros, each episode has a sort of unique one, but the theme is excellent, just like the movie Fargo theme.
X-files - probably the most memorable theme music of them all, perfectly conveyed that mystery and creepiness of the shows ayy lmaos and monsters.

...Which doesn't have an amazing opening but it's in the same genre of show as Knight Rider, you might even say a copycat show, but it didn't grab me.
I think the difference is in the charismatic main characters, be it Hannibal, Murdock, Mr. T and Face, or Michael Knight and KITT.

I got a few DVDs of it since, and found it hilarious. In one scene, BA dives onto the hood of a moving car and punches the driver in the face through the windshield, knocking him out instantly. Then he rolls off in time for the car to drive off the road and into a tree.
