Paprika was originally going to be a cartoon about a disabled boy named Stan and his brother Oliver. At some point in production, Olvier turned into Olivia and was his sister instead. How often does this sort of thing happen? Where a show is forced to make changes during production in order to make the cast more diverse? People harp on about it all of the time, but actual instances of it happening seem pretty rare.

He was still Oliver as early as last year. They must have been forced to change it pretty late in development.

It's not always forced. Sometimes it's an independent creative decision, sometimes it's because it adds more to a character or story. When Roald Dahl was writing Matilda, the protagonist was originally a boy, but half way through he hit writers block and couldn't think of anything to do. Then he changed the main character to a girl and suddenly it all clicked. So it's not always a bad thing to change gender or race halfway through a story. Sometimes when I write and all that, I'll decide to alter a character and it gives me a better idea of what that person is, and how their dynamic in the story changed the whole thing

Fun fact, the Geek in the Sam and Max cartoon was originally a boy.

Execs said they needed a female lead, so they gave him an ultimatum: make the Geek a girl or change Max into Maxine.

The legion of super heroes cartoon was supposed to be about super girl originally, they changed it to superman late in development but changed nothing else so it made braniac-5 seem like he wanted the super D in robo-ass.

Toph in Avatar was originally an adult man, but the writers had trouble integrating him into the cast. Then they tried turning him into a cocky teenage asshole who would hit on Katara and butt heads with Sokka, but that character wasn't clicking either.
