In universe and out of it, the Water Tribe ethnicity is considered hot. Katara, Korra and Sokka all have dozens of people wanting to get into their pants. Acording to the canon lore even their gate of chakra is localized on the genitals, and is conected to the carnal desires, like sex.

Hell, Sokka and Suki are probably the only characters on the show that were implied to have sex. So being deliciously brown with blue eyes and natural great hair is already an advantage, and a female Sokka has a bonus because like the masculine counterpart, she could also have sex along the show with someone that she really likes.

Second:

Let's be hinest here, Sokka is the guy on canon who has attracted most girls in universe, you have Suki, Yui, Ty lee, Toph and even some Ba Sing Se girls. Apart from Ty lee I doubt that the others would gave him attention if he didn't had a charming personalitty and was attractive on his own way. Sokka is also pretty fit in the few moments that we see him without a shirt on. What this mean? That a female Sokka should be as attractive for guys, as he is for girls, she should be able to charm a bunch of characters along the show, so she must be hot.

But turns out that a female Sokka doesn't have a canon form, which ends up forcing people to imagine how she would look like, which probably helps them to picture her attractive on their own way. What we can tell, is that by being the older sinbling Sokkara probably would be bustier or have a bigger ass than Katara. Which basically means that she could be anything between "bigger than Katara" and Ty lee/Jim size.

Third:

This is pretty simple. Sokka is fun, inteligent and realible, and Sokkara would have all of his good and bad traits too.
