Mexico did not have the infrastructure, or the money, to fight an effective war against the US. California was easy to take because the massive desert that divided Mexico City and California was too large for them to cross. Their best bet was to stay further east, which is what they did. Even then they couldn't match the firepower the US was able to amass. Mexican officers were also of poor quality.

US leadership was just starting to get its shit together. Prior to the War, the conventional US army had to be supported by the Militia, this was the first war where the US could actually hold its own without that support. The quality of officers was also high. Men like Grant, Lee, Stonewall, Stuart, all gained valuable experience as young field grade officers. Those skills would translate to the Civil War.

Well the Mexican "Empire" was overextended. The Spanish owned the fuck out of it all but when they left the Mexicans couldn't keep it all up, they got involved in a lot of wars within their own nation and against Native Americans. They couldn't keep their land safe mainly because they didn't have the knowledge to keep it up and they still were a bit uncivilized.

They fucked up when Texas wanted independence. The US agreed but still wanted Texas to join them while Mexico said fuck off you're a part of Mexico. What accelerated the actual war was Mexico's aggression in Texas against Americans.

"Remember the Alamo!" Look at who died at the Alamo and you'll see a good bunch of American heroes so the war basically became inevitable because of Santa Anna.

Mexico lost the US even payed for the land we got and we won.
