If you're doing a muscle group split, 6 days a week is perfectly feasible. Obviously you're not going to train the same muscle group 6 days a week, but splitting it into a few different days and hitting each muscle group twice a week is perfectly viable. Just because you lift 6 days a week doesn't mean you are "overtraining." It depends on how you're doing it.

Example:
Monday - Back/Biceps
Tuesday - Chest/Triceps
Wednesday - Shoulders/Legs
Thursday - Back/Biceps
Friday - Chest/Triceps
Saturday - Shoulders/Legs

Sort and rearrange as necessary. And yes, you're going to be using some of the same muscle groups secondarily for some of these (like shoulders being used as a secondary group on chest day, but then having their own day afterwards) but this won't have a huge impact on you if you know how to lift in the first place. This is not recommended for beginners, either. If you're just starting out, stick to 3-4 days a week for the first few months at least.

I have been doing a schedule similar to the one I posted for quite some time with no negative results and some quality gains. Yes, you will lightly hit even your biceps while benching, but not significantly enough to cause symptoms of overtraining. Training each muscle group twice a week is perfectly fine and even encouraged. Squatting every other day will obviously fuck you up, and tearing your rotator cuff could be due to any number of things, such as poor form or trying to lift a weight you weren't ready for.

When you workout, what you're actually doing putting so much weight on the man that his hands just rip off. Over the course of the next day or two (three if you really went hard) the hands will grow back in greater number than before. This gives the man greater hold on the ladder and allows him to pull himself up. In other words, you tear the myosin heads off the myosin and force the muscle to make more so it can better perform when you load up that same amount of weight again. Note, this is why muscles increase in size. You add more heads to the muscle strands. That does not mean you are gaining muscle strands. The number you are born with is the number you keep until you die. They just get bigger is all.

When someone overtrains, that means they are training so often that their body doesn't have time to heal itself. It would be like forcing the man to climb the ladder even after his hands have fallen off and he hasn't grown a new pair yet. In the best case, this will simply mean you don't gain any strength. In the worst case, you will actually lose strength over time because your muscle will make less myosin heads just so it can function properly since you're using it so much. That's why rest days and sleep are essential. You just CAN'T workout every day or you'll rip yourself apart.
