That's right, because regardless of whether you find it cancerous or not, the will they or won't they part is still the one that hooks people the most, and it's also easiest to write. Writing a couple that's happy and well-functioning together, as people want to imagine true love matches being, in an interesting way without horrible relationship drama is more challenging and usually needs some sort of external adventure plot, a mutual adversary or something - you're right there. I've seen lots of people outright say they drop stories or fanfics or whatever the moment the couple gets together, because they're most interested in seeing how the couple defeats the obstacles to their love and finds their way together, and the mundane blissful everyday doesn't interest them. I mean usually every story needs some sort of conflict, except maybe comfy slice of life stuff.

There's simply more suspense in ships that aren't together yet, which is why people get more emotionally invested in rooting for them. Which is why there are more outspoken, passionate shippers rooting for their noncanon ships.

However, again, shipping is not limited to noncanon ships in any way. Many people ship canon ships, and insisting that it's only shipping if it's not canon is bullshit and reveals one's ignorance.
