Cutting more than a few of her scenes made her character feel inconsistent. She never really hid her feelings from Subaru in the WN or LN, it's just that a lot of those scenes never made it in. A lot of those would probably be regarded as negative, but that was the Rem who succeeded in making Subaru fall for her.

It's kind of debatable, Ley has stolen skills from memories he's eaten, though I still think evading Al Huma spam + the morning star seems bullshitty and he would've just died. Well he isn't really 10, more like 100+. Plus Ley is around Rem's height. Regulus is really tall by comparison.

I think its mostly to avoid tipping the hand as to what kinds of powers he has. I don't even know how his eating thing works. He presumably had to beat Rem first to do it, since she was injured by the battle, he can also seemingly do it pretty quick because he ate a bunch of other people too.
