I want to finally watch this but it's damn near 200 episodes, and it's probably mostly filler where nothing gets done, and shit progression.

It's a Rumiko anime. There are no filler episodes because they're all filler episodes

That's because she wasn't the main girl until fans and editorial demanded it. She was pretty much Shampoo.
