I think Duke 3D, Blood, Commander Keen, Epic Pinball, Stargunner (even if it is unreasonably hard), Doom and Raptor: Call of the Shadows are some of the best DOS games out there.

I think Hocus Pocus is decent but not great, Mystic Towers is pretty good and I've always felt Jazz Jackrabbit to be not as fun as Commander Keen, but with Jazz Jackrabbit 2 being great.
