the movement however is smoother and you have a lot more freedom

The gameplay is kinda like Tenkaichi but worse. The reason you play Xenoverse is character customization though.

why should they since its locked to one character with predetermined stats
a much better thing would be create another 2-3 strings for each race to choose from

Because if strings were balanced then they wouldn't need to create 10-15 new strings.
