In an MMO, yeah sure, you're directly interacting and often competing with other people for role dominance so you want to be doing your job at peak performance which requires racial considerations.
In a single-player RPG that's as piss-easy as the modern Elder Scrolls games, there's absolutely zero reason to care about min/maxing your character.

I'm not going to pretend like those touches of immersion are shining examples of game devs putting in effort to show they really want people to enjoy the game world they've created though.
They definitely could've done even more like made players using beast races have to worry about the possibility of being ambushed by slavers trying to kidnap them to sell off.

My main concern though is how apparent it's become that they're content with rehashing the same game every few years in a different setting for easy money.
They'll change or add new supplementary gameplay systems and simplify old ones, spin them to sound like they'll completely revolutionize the way you play the game even if it winds up being a bunch of passive bonuses or something, and then they're done.
The little things like those extra animations are what really show that game devs actually enjoy what they're creating though.
Things that obviously didn't need to be added but were anyway because a developer just wanted to, not because it'd directly help a marketer sell the game easier.
Conker got like 10+ different idle animations, some with multiple voice lines, just because the developers thought of funny or interesting things during development and wanted to add it in.
