In 90% of professional kitchens you will have a large ~60"+ gas range, and if you are preparing something which really would be better suited for an induction cook top you will have a specific induction cooktop, generally a single portable unit, but occasionally a larger unit.

I have personally never worked in a professional kitchen that had an induction cooktop installed permanently in a fixed location. The one restaurant I worked at that used one used a small portable countertop unit.

Induction cooktops are really only popular for home kitchens and especially among households of young children since you can touch the cooking surface with your bare hands without burning yourself.
