It's a mole sauce, you use the broth of the poultry when you make it and is served something like a curry, not all food in mexico is spicy and in facts there's tons of dishes that are not or where chili is optional via salsa, we also cook a lot of mediterranean stapples, our food also starts with a sofrito, a mexican mirepoix if you will, so it's got more in common with European cuisine than it would appear.

There's tons of recipes which are non spicy and not served in tortillas (although you can use them much like bread with most of our dishes) the overwhelming majority of Mexican cuisine is everyday stews, soups, salads, the antojitos (Spanish for treats) are the better known but mostly not what a healthy, sane adult would have for weekday meals
