Pupusas + curtido (spicy pickled cabbage/vegetable mix) + sauce = Salvadoran in particular.

The other stuff is more common outside of El Salvador. Platanos; queso blanco, etc.

Nice, mariscadas are good but I always end up leaving some leftovers because I have a stomach of the size of an apple.

Corn is a massive staple crop, basically. It's affordable. Corn becomes corn flour, which becomes everything else.

The other big crops (sugarcane, coffee, coconuts, etc.) really aren't edible in the manner of corn.
