Even if we ignore your retarded Germanic = German fallacy, the literary body is referred to as the Matter of France, not the Matter of the Franks. This is because these stories originated in France and were retold in France over and over (though they partially influenced Italian writers as well, resulting in for example Orlando Furioso). It is therefore undeniably part of French culture and French heritage.

This is why Fantasy paladin aren't simply the historical royal guards, but the holy knights they were in the Matter of France. In the Matter of France, Roland died fighting Moors in Spain. The historical Roland (whom we literally have a single line reference to) died fighting Christian Catalans.
