Hard to name a single favorite but manchego, gruyere, brie, talleggio, and prästost are a few off the top of my head. That last one is Swedish and I don't know where the fuck to get it except for one neighborhood market near me, but it's fucking great.

My whole life I have hated blue cheese but lately I've been very slowly starting to come around. Adding it to bacon might be a good thing for me to try. I don't think I've had Stilton but I gather that it's supposed to be the god tier of the blues.

yep, that's right. But you need to search carefully. For example I haven't been to a restaurant yet, that would serve any actual traditional food tasting the way it "should" (it doesn't mean of course that there aren't such places, but you'd probably need to go to some expensive place or so)
the other alternative is to find some actual locals (preferably older, preferably living in the countryside). They know how to cook it right. For this you can try couchsurfing or whatever.
