I wish there were more episodes as well, but they are making another season so that's always good. I would also recommend Boku no Hero Academia. It's probably one of my favorites.

I always recommend Berserk. It's a fantasystory that's a bit darker than your list, but its good. The original series is getting a bit old, but totaly watchable.
Haven't watched the new movies that covers the same story but in newer shinier animation, but with shorter time. (3 movies vs 23 episodes)

Or with that taste, just watch any shonen.
One Piece, Nauruto, DBZ. Hunter X Hunter etc.

With that said, I respect but disagree with your opinion. Clannad (especially after story), while popular, is still a series that both normies and veterans can get into. It's just really well made, even if the VN is clearly better. I've never heard anyone think badly of Phantom either (and while I love the VN, it's way too old and cumbersome to introduce people to).

Well that'd be the formal definition, but in general it's referring to people obsessed over Japanese "entertainment" like J-RPGs, anime, manga, etc too (hence why anime related stuff are sometimes called weeb trash: because it's "trash" for "weebs"). Calling anime weeb trash would only make sense if you were against anime in general. Calling only some anime weeb trash would be like only referring to some gay porn as "gay shit" while thinking other gay porn isn't.
