I think the only indication we have is Zombie Master, and we don't know exactly how he wound up like that (e.g. if his body just rotted away)

Yep. As viewers, we know he'll regenerate cos we'll always know the next actor or that there's another series, but they could get some good drama out of it. It'd be boring for the Doctor to always ponder that he could die, but it might make him more aware of mortality. He no longer has a safety net of "well, it's fine, I definitely have another regeneration in me." He never quite knows now.
