Her arc was that she started off a copy of Curzon-- impulsive, reckless, short-sighted and flighty-- and it took her time until she could develop her own meld of Dax and Jadzia, until she could learn to still live in the moment while also looking ahead to the future and planning long-term. Early Jadzia would never want to stay in a committed relationship, or raise another child, or be a peer instead of a mentor, and receive advice instead of insisting on being the dispenser. That growth took time.

It flew over your head because it took several years, and I guess you were just looking for a rushed, unfinished arc that lasts only a single year, like Ezri's.

I've seen every episode several times and I don't notice much difference between season 1 Jadzia and season 6 Jadzia except that she's getting Klingon'd

In season 1, if someone offered to Klingon her, she'd accept. And then next week she would get Bolian'd, and the week after Vulcan'd, and in another week Orion'd...

The show never presented her promiscuity as a negative trait, but it still took years of character growth before she was in a state of wanting the SAME penis every week for the rest of her life.

I don't just want to talk about sex though, so I'll go back to the other aspects I mentioned. Look at episodes like "Dax" and "Blood Oath". She receives valuable life advice from her comrades in those episodes, but she is stubborn and strong-willed and so she refuses to listen to that advice. That's her character in early seasons, still thinking of herself as an "old man" who knows better than everyone else. It's only in later years that she'll actually listen to Sisko and the others when they give her advice (like in "You Are Cordially Invited"). Over time, she changes.

Not every character needs to go through an equally dramatic character development arc. Jadzia was supposed to be wise beyond her seeming years, and that doubtless lead to her being seen as last in line for needing development. Though, when Farrell left, they probably realized how much more they could have done with her and, knowing they wouldn't have a lot of time with Ezri, put a lot more emphasis on her.

I think you can make an argument for both. I can see the analogue to Israeli Jews in Bajorans, and it's impossible to deny that the Ferengi are a straight-up depiction of the Jewish merchant figure common in European literature for centuries.
