It's a computer, it wouldn't "assume" anything, it would still serve it hot very likely as that's how it is made. At least if Star Trek makes tea the old school way.

Its pretty simple, in the future ice tea is a much more popular drink than now, so if you just tell the machine that you want "tea, earle grey" it will assume you want ice tea
