In Canada, they would have some legal protection of use of their image. In the USA, once they're convicted and on the sexual offender registry, they lose a lot of specific rights, including that of privacy. Furthermore, you also waive image protection in most states when you step onto private property; for example if you are a homeowner and you have security cameras on your property, you can distribute images of trespassers legally. What you can't do, if you're a business owner with security cameras, for example, is release a security camera image and say "please help me identify this man who just stole $130 in steaks from my grocery store". There is some discretion here, at least in Canada, in that you could say "please help identify this man who forgot to pay for his meat" and depending on the judge, it could be permissible in court.

As for entrapment, there is no sensible legal defence in these cases because typically the men a) initiate the sexual discussion and b) don't resist further escalation of the crime they've initiated.
The "ethical" test usually used, in simple terms, is whether the person would have reasonably executed the crime given the opportunity in other circumstances, or whether they were coerced or "tricked" into doing something they would not normally do.
