There's a lot of speculation that the gun Dolores digs up is "real" and always fires lethal bullets regardless of who is holding it or who it is aimed at.

1. He just found out about it recently. In this instance, he maybe stumbled on a clue at the end of his last time in Westworld, or maybe saw or heard something about it in the real world, (maybe from somebody that works in Westworld, or some random person that stumbled onto a clue and posted about it online or something) and then was waiting until his next trip to try and find it.
2. The maze is, or is tied to, what Ford is making. In this instance, he likely had prior knowledge about it somehow (he's a former employee or has a connection to somebody working in Westworld), but had to wait until it was in a finished state to actually go for it.

Unless the guns work by detecting heat signatures like the original movie I don't think it is point against him being a host. In the show it seems more like some crazy sophisticated bullets that still hit guest but do no damage, again he could just be a host given the same status guest as some part of the larger plan.
