Avoid One Piece at all costs. It's literally the worst thing I've ever seen.

OP, keep in mind that the anime industry is very derivative of itself and relies very heavily on certain tropes. I would personally recommend starting from the 80s-90s and going forward from there, to understand how the genre conventions were defined and where the influences come from. There are certain things you won't really fully understand or appreciate if you dive right into them without background knowledge.

When it's good it's actually pretty great, recap/filler/flashback ratios are its downfall. A kai edit as suggested elsewhere, done well, would make it incredible.

Also I fucking hate fan service and any anime with any sort of coombrain or flirtatiously coombrain scenes. Ruined episodes of Goblin Slayer and Seven Deadly Sins. I also really dislike perfect protagonists, which is yet another thing I disliked about Goblin Slayer.
