To be fair, when I was working my way through university as a bartender I cleared about 15k in salary working nights for a year part time. I made about 20-25k a year in tips. Literally unclaimed cash in my pocket. In higher end restaurants I had colleagues pulling 70k a year working full time with combined wage+tips. The only tricky part is how much you lie for the money you claim on taxes.

That hour I’m there they’re not concentrating on service just me, they have a numbers of tables. If I’m at a restaurant for an hour and spend 100$, and there’s say 5 other customers spending the same amount for the same service time that server it’s making 100$ an hour. McDonalds workers get $15 for handling food for probably 100 people per hour. A waitress thinks she should get $30-$50/hour under the table. That's unreasonable for mostly unskilled labor. Unless you are at a high end restaurant where they are very skilled at handling wealthy patrons. And if you are at a high end establishment because you are a wealthy patron of course you should be tipping well. But that doesn't apply to 99.9% of america.

Right? Service is really uneven everywhere I go. I never know what to expect. I think the only way to even it out is to have restaurants pay their waitstaff and the better restaurants both in terms of management and pay will have better service.
Honestly, the service of eating out is more important than the food. I don't want to eat shit, but I can make good food at home. I just want someone to make my life easy. If you made me not worry about anything that night and everything was comfortable, was there when I needed it, was as ordered, I don't really care if the food was incredibly or average. That's what I expect to be paying for when I go out.
Better if people know what to expect and are obligated to pay for it. Otherwise you end up with waitstaff phoning it in for new customers.
