Remember in the Hobbit when the eagles save the gang and Gandalf explains that this was some next level shit because the eagles dont care AT ALL for the trivial little garbage that happens on ground level.

Sauron can shoot energy from his eye. This isn't discussed in the book series more than once. But in side stories it is discussed more plainly when an eagle does fly over Mordor and Sauron shoots it out of the sky. This argument has taken place long before the movies came out. People have been asking why didn't the eagles just fly Frodo over since the books released. There are newspaper articles about the debate. So Tolkein wrote in a side story about how Sauron can shoot energy from his eye, not at infinite range of course, but within the bounds of his kingdom. So that is the official reason

Anyway its unknowable why the eagles suddenly started caring, thats the thing about them you CANT know their intentions.
And being so closely related to Eru its likely they know the difference they can make in earthly affairs and simply choose not to act because that would rock the balance.
Just look at Eru sending Gandalf back that was the highest form of meddling possible like "Morgoth-deciding-to-take-over-the-world" levels of high.
The divine being of middle earth arent supposed to meddle becaus that throws shit of balance.
