You can watch the first third of the movie, that's the only part that's really absolutely essential. Once they leave Christophsis, you don't really need the rest.
I'd recommend just watching all of it anyway for the sake of completion. There's some stuff later in the series that has some connection to the later parts of the movie. Those connections are usually explained in the prologue of the relevant episode but it still helps.

The 2008 animated film is basically the first four episodes of the show, and introduces Ahsoka. Other episodes jump back to the time period before or during the movie so its good to watch the whole film for context.
The fact of the matter is that the show only improves. You may find the first and early second seasons odd at times. but once you hit Season 3 the show hits an amazing high and keeps is stride. The difference between S3+ and S1 & S2 is like night and day.
If you're asking if the show is good? Yes it is. Very much so The movie? Not really. It's a fun thing to look back on rather than a good first experience.
Just stick with it. Trust us. By the time you're finished with it you'll see why its special, but you have to give it a chance.

I think in this case you could argue that he didn't at all expect to find Dooku there so he wasn't really feeling for him. Compare to ROTS, where Dooku being onboard Grievous's ship made a lot more sense. It's not like Dooku and Obi-Wan have any real connection between them- they have Qui-Gon in common but they're not really directly linked to each other in the way that say, Obi-Wan and Anakin might be.

My thought is that is defender serves an important purpose in giving the empire a fighter that isn't shit. The mass produced weak TIEs speak more to the soviets during WW2, however the empire is treated as far more nazi than soviet, especially in later iterations so adding a high quality fighter helps with that. Favoring quantity over quality is something more communist than facist, it would also be nice to show other communistic aspects (like they could be shown demolishing the beautiful architecture native to planets and replaced with utilitarian ugly brutalist architecture) of the empire to emphasis this for consistency.
Also my childhood was defined by lucasarts games (including secret weapons of the luftwaffe which sparked my interest in military aviation) so I'm biased.

If you look at the Wook article for TIE fighters, they can be modified to have additional weapons like torpedoes and ion cannons. Makes them a bit more realistic because many aircraft have hardpoints that can be swapped out.
Before the Awakening tells of Poe's sympathies with the resistance, and his subsequent recruitment by Leia. It end with her informing him about Lor San Tekka and their need to locate him. The Poe Dameron comic is that mission once it gets underway.
