The writing in that episode is indefensible. It's literally "men who persistently ask girls to dance with them are worse than Hitler". And what's worse, it was so easily salvageable: the scene where Kevin drives up to the car wash should have had him panicking about the fact that he met two children who he tried to hit on while simultaneously being confused about his attraction to Stevonnie, so he acts like a total douche and calls them freaks and THAT gets Steven mad, that he implies their fusion is disgusting instead of awesome, and by the end Stevonnie realizes that she was silly to care about some asshole's opinion while Kevin is still left attracted to Stevonnie.

He was kind to Peridot way before she showed signs of change and she out right tried to kill them many times.
Jasper hurt all them including Steven and was remorseful of all her actions including calling amethyst a mistake. Yet Steven cared for her.

I normally say the smoking gun is maybe he was being that way because it effected Connie too but that doesn't add up because she wasn't angry over Pearl brainwashing her, or Connie's mom belittling her.

I see it more as the writers not having a definite characterization for what kind of person Steven is. Sure a lot of people will generalize him as being a happy, naive kid who, having lacked an actual masculine rolemodel to stand by, is meek in nature and dislikes violence. That holds until you start jumping around episodes and you start seeing him yelling or crying out of frustration, hitting things with his shield, imprisoning others inside of bubbles that they can't break out of, and some times being the only voice of reason when everybody else is too busy being out of character without any real plot-wise explanation other than they're being silly.

Honestly Steven and Connie's roles were reversed for the episode. Connie is the one who takes things too far and gets carried away, like wanting to run away because her parents might not let her see Steven or the entirety of Sworn to the Sword. Steven When written properly is extremely emotionally intelligent, but has issues bottling up his emotions, like in The Test. Connie should have been the one seething about Kevin, and Steven should have been angry, but pretty reserved about it. The entire "lesson learned" moment should have come from Steven.

But I'm with you there. I dropped at the end of the first season and never had a shred of regret. For me the issue was that about half the plot was never resolved. Yeah Amon was gone, but half the city was still in rebellion led by multiple extremely powerful troops who were still equipped with technology far beyond it's own time and they still had a list of grievances, many of which were perfectly valid.

Yet all of this didn't matter because a hand full of battle ships arrived. They never reach a conclusion, hell they never even reach the talking about the issue. It's just gone. No closure, or anything else.

Fluid =/= good fight. It's a static shot with a flat camera with only one interesting camera change. Literally all the boarders had to do was place the camera slightly overhead and have a BIT of a wiggle during the side-step or first swipe with holo-Pearl, but instead it's completely standstill which makes the movements feel weak but fluid, up until the camera changes, then it feels "good".

More camera movement would've made it too dramatic. Just because an anime animator was involved doesn't mean that this needed to be an anime fight. The show has a precedent set for how it normally looks, yes that includes boring flat staging and sometime wonky timing, and to step too far outside of that would imply something interesting or special was going on, which isn't in that scene. If they had a plot-important huge action sequence then maybe putting extra special attention into it would be necessary, but this fight didn't call for that.

All you can really ask for is the animation to be made a little more competent, and Hori's involvement gave them that.
