Ergot isn't really a problem. It's not fast growing. When it infects fields of plants it infects a small number of them and the vast majority are unbothered by it.
Ergot doesn't really have the potential to become a blight. It's more of a mild nuisance that ruins a small percentage of your crops.

In the past it was more of a problem because they didn't remove it before grinding it into flour, which spread the poisons in the ergot into the food supply.

I'm not familiar with their methods on ergot, but if what you say is true then the amount of ergot they're allowing into their alcohol isn't enough to cause problems at that concentration.
