South africa is big, its a good few englands at least. The bantu folk arrived within the current borders about a 1000 years ago. Prior to that there were khoi/san folk living across the whole country.
Bantu people while crushing the khoi kingdoms in the north - e.g. mapungubwe around 900 years ago and penetrating into current kwazulunatal and the eastern cape, did not cross the kalahari or the karoo. Thus the southern western portions of the country were predominantly khoi ( Griqua, San etc) , while the northern and eastern areas were populated by bantu people.

During the colonial era, movements of people were still under way - e.g. the matabele went from natal to zimbabwe and tswana people were pushing south from botswana into areas such as the transvaal, freestate and current day lesotho.

This is correct, the cape was not settled by bantu people, it was all khoi until the settlers arrived. The karoo and to the north the kalahari acted as a buffer. Why it did so is not clear, as the majority of khoi people were pastoralists, not hunter gatherers. It may also be that some of the khoi were militarily capable of keeping bantu people out of their territories.

Interestingly, many khoi sacred sites are still sacred sites today for the bantu people who have displaced / absorbed them. You see this in the drakensberg, lesotho, botswana - even namibia - so there may have been something else going on too.
But you are quite correct, the bantu never crossed the karoo in any numbers.

This is particularly noticable if you look at words for animals and birds in each indigenous language. For cape endemic species there are no xhosa names at all ( xhosa being the closest bantu group to the cape geographically). Its like they were never there

Although its a pretty dry place - no rain for 7 months of the year and while the orange rive does flow nearby - its a river that can dry up completely at times - I have rafted some of it, and in some places in dry years it can run underground for kilometers - particularly in the hopetown douglas areas.. And there are people near by - Hopetown is about 25km away, Luckhoff and Kraankkuil are a bit closer.

I am completely willing to heap praise on the fact that orania still exists, and represents many peoples life works. But it is non-transparent in an uncomfortable way - sort of like stepford.
