Have never tried a fresh one although I think there's some micro-scale production in northern Baja for the American market. The dry variety is not rare or difficult to find but it isn't especially popular either, we do have a large Christian Arab community so I'm guessing they're the main consumers.

Roman Honeyed Stuffed Dates Recipe

Ingredients:
-dates
-coarse salt
-honey
-chopped nuts (pine nuts or hazelnuts, but I guess any would be fine) or coarsely ground black pepper
-red wine (optional)

1. Pit your dates (take out the seeds).
2. Stuff them with your chopped nuts or black pepper. Make sure you can still seal the opening in the dates so nothing comes out.
3. Roll the dates in some coarse salt.
4. Heat the honey in a pot. Mix with a bit of red wine if you wish.
5. When the honey starts to boil/bubble, take it off the heat, and coat your dates in it.
6. Become too fat to ride a horse in the Roman cavalry.

Dry dates peeled and without seeds
T'heena (a consontrate made from sasame seeds) (use iraqi or syrian for best taste)

Mash the dates together with the t'heena then form shapes from them

Put them in a pan without oil for a couple of minutes then cote them with baked sasame seeds

I've never seen a fresh date in person before, in my city we get deglet noor dates from Tunisia, Medjool dates from the States, and my favourite type of date, Bam dates from Iran. Would really like to visit a date market in the Middle East one day.
